📝 Ingredients
- 1 pound lean ground beef
- 3/4 tsp cumin
- 3/4 tsp oregano
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups salsa
- 1 cup frozen corn
- 1 green pepper (chopped)
- 3/4 cup uncooked white rice (I used long grain white rice.)
- 1 1/2 cups low sodium beef broth
- 1 cup grated cheddar cheese (2.5-3 ounces)
👨🍳 Instructions
- 1Brown ground beef in a large skillet over medium-high heat.
- 2While the meat is browning, wash and dice the green pepper and grate the cheese.
- 3Drain the fat from the skillet and turn down to medium heat. Add the cumin, oregano, salt, and pepper. Cook and stir for a few seconds until fragrant. Add the salsa, corn, diced peppers, rice, and broth.
- 4Cover and simmer over medium or low heat for about 25-30 minutes or till rice is tender, stirring occasionally. Add water if the mixture looks too dry. Turn off the heat.
- 5Sprinkle cheese over the top and replace the lid. Let sit for about 2 minutes or until the cheese melts.
