📝 Ingredients

  • 1/3 cup Black Raisins/Currants
  • 1/3 cup Dried Cranberries
  • 1/3 cup Chopped Cherries
  • 2 tbsp Finely Chopped Candied Orange Peels
  • 10 Walnuts Chopped
  • 10 Almonds Chopped
  • 10 Cashews Chopped
  • 1/4 cup Water
  • 1/2 cup Fresh Orange Juice
  • 1.5 cups All Purpose Flour
  • 1/2 cup Sugar
  • 1/2 cup Thick Fresh Yogurt/Curd
  • 1/3 cup Cooking Oil
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1 tsp Vanilla Extract
  • 1/2 tsp Cinnamon Powder
  • 1/4 tsp Clove Powder (4 Cloves Powdered)
  • 1/8 tsp Ginger Powder

👨‍🍳 Instructions

  1. 1In a mixing bowl, add all the chopped dry fruits and nuts – 10 walnuts, 10 almonds, 10 cashews, 2 tbsp orange peel, 1/3 cup black raisins, 1/3 cup cranberries and 1/3 cup cherries.
  2. 2Add 1/2 cup fresh orange juice followed by 1/4 cup of water.
  3. 3Mix the fruits well and cook covered on low flame for 10-15 mins until the fruits & nuts are softer and there is not a lot of liquid.
  4. 4Remove from heat and let it cool down completely.
  5. 5Preheat the oven at 160°C for 15 mins and grease & line a 8” round baking pan.
  6. 6In a mixing bowl, add all the dry ingredients – 1.5 cups all purpose flour, 1 tsp baking powder, 1/2 tsp baking soda, 1/2 tsp cinnamon powder, 1/8 tsp ginger powder and 1/4 tsp clove powder.
  7. 7Mix it well and set aside.
  8. 8In another mixing bowl add 1/3 cup oil, 1/2 cup fresh yogurt/curd and 1/2 cup sugar.
  9. 9Whisk it until the sugar is dissolved and the mixture looks well combined.
  10. 10Add 1 tsp vanilla extract and mix it in.
  11. 11Now add the dry ingredients to the wet mixture.
  12. 12Fold it gently without any lumps.
  13. 13Next add the cooked nuts & dry fruits.
  14. 14Gently fold it in. The cake batter should look glossy & smooth.
  15. 15Pour the cake batter into a greased and lined baking dish.
  16. 16Bake at 160°C for 60-65mins until the tester comes out cleans. Let the cake cool down completely before cutting it. It is optional to dust icing sugar on top.
