📝 Ingredients
- 1 medium yellow onion (peeled and finely diced)
- 2 tbsp olive oil
- 2 stick celery (small diced)
- 1 large carrot (peeled and diced)
- 4 clove garlic (minced)
- 1 3/4 cup cooked white beans ((15oz can, rinsed and drained))
- 1 bunch kale (stem removed)
- 1 tsp dried rosemary
- 1/2 tsp crushed red pepper flakes
- 2 tsp ground coriander
- 2 tbsp tomato paste
- 4 cup vegetable broth
- 3 tbsp lemon juice
- 1 tsp sea salt
👨🍳 Instructions
- 11. Peel and dice onion and carrot. Mince garlic. Dice celery (including leaves if applicable).
- 22. Heat olive oil in a large pot over medium. Add the diced onion and cook, stirring regularly, until beginning to brown.
- 33. Add the carrot and celery and cook for 3 minutes, stirring regularly, until celery is beginning to soften.
- 44. Add the garlic, rosemary, red pepper flakes, coriander, and tomato paste. Cook for 1 minute, stirring consistently.
