Get ready to be transported straight to Italy with this amazing creamy cherry tomato pasta with burrata cheese. This cheese features my favorite cheese of all time, and it is super easy to make. Even though it is easy to make, this dish tastes so amazing. It is the perfect meal to make for special occasions such as Valentine's Day or an anniversary. Don't forget to buy some bread when you make this dish because you will want to soak up every ounce of the deliciously creamy tomato sauce.
📝 Ingredients
- 300 grams Spaghetti Quadrati (10.5 oz for two people)
- 500 grams Roma cherry tomatoes (17.6 oz)
- 2 garlic cloves (one per person)
- Fresh basil
- EVOO
- Salt and pepper (as much as required)
- Rock salt
- Pecorino cheese (as much as preferred)
- High-quality Vannella burrata cheese (small burrata, one per plate)
👨🍳 Instructions
- 1--- To Make the Cherry Tomato Sauce ---
- 2Cut the cherry tomatoes in half.
- 3Pour EVOO into the pan, and crush two cloves of garlic into the pan.
- 4Before the oil gets too hot, add a little bit of water to the pan so that the garlic doesn't burn.
- 5Stir everything together with your spoon and wait 10 seconds.
- 6Add the cherry tomatoes to the pan.
- 7Wait until the juice comes out of the cherry tomatoes. Gently press your wooden spoon to the top of the cherry tomatoes and help the juice come out.
- 8Add salt and pepper, but not too much, as the pecorino will be salty. Be generous with the pepper.
- 9Pour the ingredients from the pan into a blender, add a little bit of EVOO, and blend it gently for 10 seconds.
- 10Add the blended sauce back into the pan.
- 11Boil the pasta and add a mug of pasta water into the sauce.
- 12--- To Cook the pasta ---
- 13Start boiling water in a large pot and add 1 tablespoon of rock salt.
- 14Once the water is boiling, add the spaghetti and use the wooden spoon to push the spaghetti in. Follow the cooking instructions on the package.
- 15Stir the pasta every 2-3 minutes.
- 16After the pasta is cooked, take the pasta out of the pot, but be sure to keep about 1-2 mugs of pasta water for the sauce.
- 17--- To Assemble the Dish ---
- 18Add the pasta to the sauce in the pan and mix everything together.
- 19Pour another mug of pasta water into the pan and stir the sauce so that it is fully mixed.
- 20Toss the sauce and pasta together. When you toss the pasta, it will move and absorb the sauce at the same time.
- 21The final touch is to break it apart and add some extra fresh basil into the pan. Then, toss everything together again.
- 22Add some pecorino cheese on top before the burrata. Cut the burrata open and mix everything together.
