A deliciously creamy coconut milk pasta dish simmered with smoked sausage, bell peppers, and basil. A great weeknight dinner option for the family.

📝 Ingredients

  • 2 tablespoons olive oil
  • 4 sausage links
  • 1 tablespoon jerk seasoning (I use Walkerswood)
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 2 1/2 cups full-fat coconut milk
  • 1 medium bell pepper (I used half of two different colors)
  • A handful of basil leaves
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 oz pasta
  • Water (to boil pasta)

👨‍🍳 Instructions

  1. 1Cook pasta 2 minutes short of package instructions. Drain and set aside.
  2. 2In a skillet, heat oil over medium-high heat.
  3. 3Add onion, garlic, and jerk seasoning. Sauté until fragrant.
  4. 4Add sausage and bell peppers. Sauté until well coated.
  5. 5Pour in coconut milk and bring to a simmer. Cook for about 10 minutes.
  6. 6Add pasta and continue to simmer for 15 minutes, or until the sauce thickens and coats the pasta.
  7. 7Stir in salt, black pepper, and basil leaves. Let simmer briefly.
  8. 8Serve hot.
