  • 8 oz chive
  • 6 egg
  • 1 teaspoon oil
  • 2 tablespoon oil
  • 0.5 tablespoon oil
  • 0.25 teaspoon white pepper
  • 1 teaspoon rice wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon potato starch
  • 2 teaspoon water

👨‍🍳 Instructions

  1. 1Prep chives: Fill a large bowl with water, place the chives inside and let them soak for 3 to 4 minutes.
  2. 2Prep eggs: Crack the eggs into a large bowl.
  3. 3Cook chives: Heat a flat-bottomed wok or frying pan on high heat.
  4. 4Cook eggs: Wipe the bottom of the wok clean with a paper towel, removing any stuck-on bits. Bring wok up to temperature again on high heat. Once it starts to smoke, add more oil.
