📝 Ingredients
- 2 Chinese eggplants (washed and cut into chunks)
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp garlic powder (or substitute with fresh minced garlic)
- 1/8 tsp red pepper (or black pepper for a milder option)
👨🍳 Instructions
- 1Cut off the stems of the washed Chinese eggplants. Slice them in half lengthwise, then cut them into chunks.
- 2Place the eggplant pieces in a large bowl.
- 3Drizzle the eggplants with 1 tablespoon of olive oil, then sprinkle with 1/2 teaspoon of salt, 1/4 teaspoon of garlic powder, and 1/8 teaspoon of red pepper (or black pepper for a milder option).
- 4Toss the eggplant pieces in the bowl to coat them evenly with the oil and seasonings.
- 5Transfer the seasoned eggplants to the air fryer basket in a single layer.
- 6Set the air fryer to 380°F (193°C) and cook for 15 minutes.
- 7Halfway through cooking, remove the air fryer basket and shake it to redistribute the eggplants for even cooking.
