📝 Ingredients

  • 3 Sweet potatoes, peeled and cut into 1 inch chunks
  • 1 tablespoon butter, melted
  • 2 tablespoons olive oil
  • 1/4 cup brown sugar, packed
  • 1/4 teaspoon ground ginger
  • Salt and pepper to taste
  • 1/2 cup chopped pecans
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 2 tablespoons butter, melted

👨‍🍳 Instructions

  1. 1--- To Make the Pecan Topping ---
  2. 2In a small bowl mix all the ingredients together.
  3. 3--- For the Sweet Potatoes ---
  4. 4Preheat the oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil or parchment paper for easy clean up.
  5. 5Spread the sweet potatoes in a single layer on the baking sheet and pour the melted butter and olive oil over the sweet potatoes. Sprinkle the brown sugar and ground ginger. Season with salt and pepper. Toss to combine.
  6. 6Roast in the oven, for 40 -45 minutes or until tender and the edges are lightly brown, turning them with a spatula once during the cooking process.
