- 2 medium zucchini
- 1/4 cup all-purpose flour (regular or gluten-free)
- 2 eggs (beaten.)
- 1/2 cup breadcrumbs (regular or gluten-free)
- 1/4 cup grated Parmesan cheese
- 2 teaspoons Italian seasoning
- 1 teaspoon kosher salt
- Oil (for the basket.)
👨🍳 Instructions
- 1Preheat your air fryer to 375 degrees.
- 2Trim the ends of the zucchini and cut in half lengthwise. Scrape out extra seeds. Cut into match sticks, ¼-1/2 inch wide and 3-4 inches long. Pat dry the zucchini, but do not salt.
- 3Set up 3 bowls for your breading station. The first bowl should be the flour by itself. The second bowl should have the eggs. In the final bowl mix together the breadcrumbs, cheese, Italian seasoning, and salt.
- 4Toss the zucchini in the flour to coat on all sides. One at a time dip in the egg mixture and then the breading.
- 5Spray the basket with a non-stick oil. Add the zucchini and cook for 8 minutes. Shake to flip, cook another 8 minutes or until golden brown and the inside is fork tender. Work in batches if needed.
- 6Serve immediately with marinara, ranch or your favorite dipping sauce.
