This leftover turkey stir fry recipe is a great way to use up all the leftover turkey from your Thanksgiving celebration. It is great for meal prep and is ready in just 20 minutes!

📝 Ingredients

  • 1 lb leftover turkey
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup onions (chopped)
  • 1.5 cups broccoli cuts
  • 1/2 cup olive oil
  • 1/2 tsp black pepper
  • 1/2 tsp curry
  • 1/2 tsp bouillon powder
  • 1 tbsp coconut aminos
  • 1/2 tsp smoked paprika
  • salt (to taste)

👨‍🍳 Instructions

  1. 1Microwave the frozen broccoli cuts for a minute.
  2. 2Shred the turkey in a bowl and set aside.
  3. 3Pour the olive oil in a skillet and set to medium heat.
  4. 4Add the onions when heated and stir till it gets tender.
  5. 5Add the red bell peppers and broccoli cuts and stir.
  6. 6After a minute, add the black pepper, curry and smoked paprika and mix together.
  7. 7After 5 minutes, add the turkey and stir.
  8. 8Allow it to simmer a bit, then add the bouillon powder and coconut aminos.
  9. 9Only add more salt if needed.
  10. 10Let simmer on medium heat for 5 more minutes.
  11. 11Serve and enjoy!
