Don’t let your leftover watermelon go to waste! Pop it in your blender, freeze it, and you’ll be well on your way to enjoying these Watermelon Lime Mint Popsicles.

📝 Ingredients

  • 1/2 a small seedless watermelon (about 4 cups)
  • Juice of 1/2 a lime
  • 2 teaspoons honey
  • 6 - 12 mint leaves

👨‍🍳 Instructions

  1. 1Scoop the flesh of the watermelon out of the rind and place it in a blender. Add lime juice and honey. Puree mixture until smooth.
  2. 2Pour puree into popsicle molds (this makes 6 with just a tad leftover). Push the mint leaves down into the puree. If you want it to show through when they're frozen, make sure they're placed on the outside of the popsicle.
  3. 3Freeze for 4 hours or overnight.
  4. 4When ready to eat, dunk the mold in hot water for about 15 seconds, then remove and eat. Mint leaves can be eaten or discarded as you lick. :)
