This creamy and easy Salsicha à Brás (sausage, potatoes and eggs) recipe is the perfect family dinner for busy weekdays! In just a few minutes you have a tasty meal ready to serve!
📝 Ingredients
- 300 grams (10 1/2 ounces) Frankfurter sausages (12 units)
- 2 eggs
- 2 egg yolks
- 800 grams (1 3/4 pounds) potatoes
- 1 medium onion
- 3 cloves of garlic
- Salt (to taste)
- Pepper (to taste)
- Parsley or coriander (to taste)
- 50 ml (1/4 cup) olive oil
- Vegetable oil for frying
👨🍳 Instructions
- 1Peel, wash the potatoes, cut into thin sticks and season with salt.
- 2Heat the oil in a deep fryer. Once the oil is shimmering, place the potatoes in the fryer. Fry until lightly golden.
- 3Transfer the potatoes to a paper towel-lined plate to drain the excess oil. Set aside.
- 4In a small bowl, whisk the eggs and set aside.
- 5In a large saucepan, add the olive oil, chopped onion, chopped garlic and the sliced sausages. Season with salt and pepper. Stir and cook over low heat about 5 to 6 minutes, stirring occasionally.
- 6Add the fries and mix gently with a wooden spoon.
- 7Remove briefly the pan from heat, pour the beaten eggs and mix well. Place the pan back over low heat for 2 to 3 minutes.
- 8Turn off the heat, add the egg yolks and the chopped parsley, stir and serve.
