Have you ever wondered what to do with your leftover bolognese mince? The obvious answer is to freeze it for another day, but if you mix it with Panko breadcrumbs and wrap it in pastry, you can turn it into the most delicious bolognese sausage rolls.

📝 Ingredients

  • 2 - 3 cups leftover bolognese sauce
  • 1 cup Panko breadcrumbs
  • 1 quantity shortcrust pastry
  • 1 small egg (for egg-washing the sausage rolls)

👨‍🍳 Instructions

  1. 1Pre-heat oven to 200°C / 400°F
  2. 2Place the bolognese sauce and panko breadcrumbs in a mixing bowl and mix well to combine
  3. 3Roll the pastry into a rectangle shape and cut in half
  4. 4Arrange a layer of the bolognese mince and breadcrumbs down the centre of each pastry half.
  5. 5Brush one edge of the pastry with water. Fold the dry edge up over the filling, then fold the wet edge on top and press lightly to seal.
  6. 6Cut each roll into approximately 3" lengths.
  7. 7Plae eachc sausage roll onto a baking tray lined with baking parchment, cut two slits on the top of each with a sharp knife, and brush lightly with egg-wash.
  8. 8Place the baking tray in the oven and bake for 12 to 15 minutes until the sausag rolls are golden.
  9. 9Remove from the oven and allow to cool.
