  • 1 carrot, finely diced
  • 1 red bell pepper, finely diced

  • 1 teaspoon dried oregano
  • 1 cup (180 g) short grain brown rice
  • 1/4 cup (60 ml) dry white wine, dry vermouth, or water
  • 1-1/4 cups (295 ml) vegetable stock or water
  • 1/2 tsp kosher salt
  • 1/4 to 1/2 teaspoon freshly ground black pepper
  • 1/4 cup (35 g) frozen peas
  • 1/2 cup (50 g) grated Parmesan, Monterey Jack cheese, or dairy-free cheese
