Curried chickpeas and roasted cauliflower and served over basmati rice in this delicious, healthy vegan meal.
📝 Ingredients
- 1 large cauliflower*, cut into florets
- 1 tbsp oil
- 2 tsp curry powder*
- 1/2 tsp salt
- 1 tsp coconut oil
- 1/2 large onion, diced (~1/2 cup)
- 2 cloves garlic, minced
- 1 serrano pepper, seeded for less heat, minced
