Crisp, buttery cookies made with coconut. Little morsels of heaven

📝 Ingredients

  • 250 gram/1 cup butter (room temperature)
  • 1/2 cup/125ml castor sugar
  • 2 cups desiccated coconut
  • 1&1/2 cups cake wheat flour (you may not need all of it)
  • glazed cherries (for decorating)

👨‍🍳 Instructions

  1. 1Preheat oven at 160 degrees Celsius. Line 2 cookies sheets with parchment paper and set aside.
  2. 2Cream butter and sugar until light and fluffy using an electric or hand mixer
  3. 3Mix in coconut
  4. 4Add a little flour at a time until you form a soft dough, pliable dough
  5. 5Using a teaspoon or tablespoon, depending on how big you prefer your cookies, scoop a little dough. Roll it into a round ball. Using your thumb or a decorating tool create a thumbprint in the centre and place a piece of cherry or a little jam on top. The cookies will spread out when baked.
  6. 6Bake at 160 degrees Celsius for 10-15 minutes or until cookies are just starting to turn brown
  7. 7Transfer cookies to a cooling rack. Once cool store in an airtight container
