An easy low carb asparagus recipe from the oven - This flavorful oven-roasted asparagus with aromatic cherry tomatoes, garlic, balsamic vinegar, vegan feta and toasted almonds is super quick and easy to make and incredibly delicious!

📝 Ingredients

  • 17.6 oz asparagus (green or white)
  • 2 cups cherry tomatoes (optional (*see here))
  • 3 tbsp olive oil (or canola oil or vegan butter)
  • 2 tbsp balsamic vinegar (or other vinegar or lemon juice)
  • 1 tbsp agave syrup (or other sweetener)
  • 1-2 cloves of garlic (or finely chopped onion)
  • salt & pepper (to taste)
  • 2/3 cup vegan feta
  • 1/2 cup slivered almonds (or other nuts or seeds)
  • 1-2 handfuls of lamb's lettuce (or baby spinach or arugula)

  2. 2Preheat the oven to 392 °F (200 °C). Lightly grease a small deep baking tray or baking dish with a little oil.
  3. 3Wash the asparagus and cut off the woody ends, peeling the lower third if necessary. Wash the tomatoes as well and spread them on the prepared baking sheet with the asparagus spears.
  4. 4Pour olive oil, balsamic vinegar and agave syrup in a cup. Press in the garlic, season with a little salt and pepper and mix everything together. Drizzle the marinade over the asparagus and tomatoes. Spread the vegan feta on top and bake for 10 minutes. Sprinkle with slivered almonds and bake for another 10 minutes, until asparagus is tender (the total cooking time depends on the type and thickness of the asparagus spears).
  5. 5Remove from oven, garnish with fresh lamb's lettuce and serve with desired side dishes such as crispy baked potatoes, creamy risotto or fresh homemade bread.
