This pasta quickly became a fan favourite after being featured in one of our YouTube videos. It strikes the perfect balance between creamy and spicy, thanks to the harissa sauce. This dish is celebrated for its quick and easy preparation, making it an ideal choice for busy weeknights, perfect for those times when you want something both special and simple.

📝 Ingredients

  • 8.818 oz linguine noodles
  • 2 tsp olive oil
  • 1 medium onion
  • 3 garlic clove
  • 2 jarred roasted red pepper
  • 2 cup spinach
  • 1 1/2 Tbsp tomato paste
  • 1 vegetable bouillon cube
  • 2 Tbsp harissa sauce
  • 1 Tbsp dried oregano
  • 1/2 tsp sweet paprika powder
  • 1/4 tsp salt
  • 1/2 cup water
  • 1 cup soy cooking cream
  • 1 cup frozen green peas
  • 3 Tbsp nutritional yeast flakes
  • 3 Tbsp toasted pine nuts
  • 1/2 lemon

👨‍🍳 Instructions

  1. 1Cook the pasta according to the package instructions, stopping 1 minute before al dente. Reserve ½ cup of the pasta cooking water before draining.
  2. 2Meanwhile, heat the oil in a sauté pan over medium-high heat. While the oil heats up, chop the onion and add it to the pan to cook for 4 to 5 minutes, until golden.
  3. 3While the onion cooks, mince the garlic and chop the roasted red peppers and spinach.
  4. 4Add the garlic and cook for 1 to 2 minutes, stirring often, until lightly golden. Add the tomato paste, bouillon, harissa, oregano, paprika, and salt. Cook for 1 to 2 minutes more, stirring throughout to toast.
  5. 5Add the reserved cooking water to the pan and stir to combine.
  6. 6Add the drained pasta, cooking cream, peas, nutritional yeast, pine nuts, roasted red peppers, and spinach. Cook until heated through and the spinach has wilted.
  7. 7Add the lemon zest and juice, and toss to combine.
  8. 8Plate, and garnish with fresh basil, seasoned toasted bread crumbs, or vegan parmesan, if desired. Enjoy!
