Derived from wheat gluten, seitan boasts a meaty texture and an incredible ability to absorb flavours. With a history rooted in East Asian cuisine, this protein-packed powerhouse has become a staple for those seeking a hearty and satisfying meat alternative.

📝 Ingredients

  • 1 cup hot water
  • 1 vegetable bouillon cube
  • 1/2 Tbsp vegetable oil
  • 2 tsp reduced-sodium soy sauce
  • 1 tsp liquid smoke
  • 1 1/2 cup vital wheat gluten
  • 1/4 cup chickpea flour
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp chicken spice mix
  • 1 tsp sweet paprika powder

👨‍🍳 Instructions

  1. 1Combine all the wet ingredients in a jar or small bowl. Set aside.
  2. 2In a large bowl, mix together the remaining dry ingredients.
  3. 3Add the wet mixture to the dry mixture and mix until it combines into a dough.
  4. 4Knead the dough for 4 to 5 minutes.
  5. 5Bring a pot of water to a boil and insert a steamer basket. Place the seitan in the middle of the basket and steam, covered, for 30 minutes.
  6. 6Remove from the heat and allow to cool before using in your favourite recipes. Tear, shred, cut, or pulse in a food processor to make pieces of any size. Enjoy!
