Crêpes are an iconic French treat. We were inspired by the sweet variation, which can be filled with all sorts of delicious ingredients, like jam, caramel, syrups, or fruit. We went with classic combinations - a chocolate spread and sugar with lemon. Bon appétit!
📝 Ingredients
- 1 1/4 cup unsweetened soy milk
- 1 cup all-purpose flour
- 1/4 cup unsalted vegan butter
- 2 Tbsp granulated sugar
- 1/4 tsp salt
- 3 Tbsp vegan nutella
- 1 banana
- 1 cup fresh mixed berries
- 2 Tbsp granulated sugar
- 1/2 lemon
👨🍳 Instructions
- 1Mix the batter ingredients in a large bowl until smooth. Place it in the fridge for at least 1 hour, or overnight.
- 2When ready to cook, heat a crêpe pan over medium heat. Use a paper towel dipped in vegetable oil to lightly grease the pan.
- 3Pour about 1/4 cup of batter into the pan and use a crêpe spreader or lift the pan and rotate it to spread the batter out thinly. Cook for 1 to 2 minutes, or until the bottom is golden.
- 4Flip the crêpe over and cook for another 1 to 2 minutes. Transfer to a plate and cover with a clean cloth to keep warm. Repeat until all the crêpes are cooked.
- 5Load each crêpe with desired fillings, like chocolate spread and fruit, or a squeeze of lemon with a sprinkle of sugar. Roll or fold, and enjoy!
