Baked One-Pot Chickpea + White Beans

If you're in need of a flavorful + rich weeknight meal to enjoy with the entire family then this One-Pot Chickpeas and White Beans is just the thing you need!
📝 Ingredients
- 1 (15 oz.) can organic chickpeas, drained + rinsed
- 1 (15 oz.) can organic white beans, drained and rinsed ((See Post above for types of white beans))
- 2 Tbsps Extra virgin olive oil
- 1/2 onion, chopped
- 4 garlic cloves, minced
- 2 tsps Tuscan Marry Me blend
- 1 tsp smoked paprika
- sea salt, to taste
- 4 Tbsps tomato paste, organic
- 1 (15 oz.) can diced tomatoes, organic
- 1/2 cup premium tomato sauce
- 1/2 cup organic vegetable stock, optional ((Omit this for less sauciness))
- 2 Tbsps white cooking wine
- 2 cups shredded mozzarella cheese ((You can also use 8 oz. fresh mozzarella chopped))
👨🍳 Instructions
- 1Preheat the oven to 375 degrees Fahrenheit.
- 2--- SAUTE INGREDIENTS OVER THE STOVETOP: ---
- 3In the medium deep skillet over medium-high heat, add the olive oil until heated. Add in the minced garlic and onions and sauté until fragrant, about 1 minute.
- 4Add in the tuscan blend seasonings, smoked paprika, and salt and stir until well combined. Add in the diced tomatoes and tomato paste, stirring until combined.
- 5Reduce the heat to medium-low and add the white beans and chickpeas, stirring to combine. Add in the tomato sauce, veggie stock (if using), and cooking wine, stirring until combined. Let it slightly bubble for 2-3 minutes and then remove from heat. NOTE: To make it more saucy, feel free to add another 1/2 cup of tomato sauce.
- 6Generously sprinkle the shredded mozzarella cheese (or sliced fresh mozzarella cheese) atop everything.
- 7--- BAKE EVERYTHING: ---
- 8Bake (without being covered) for 15-20 minutes or so, or until cheese has fully melted, the top is browned slightly, and the sauce is bubbly at the sides.
- 9Remove from oven and serve immediately with your favorite side of rustic bread, Naan bread, crackers, etc.
