This simple hot smoked salmon salad with a fresh and zesty mint dressing is perfect for lunch or a lighter dinner, and is ready in just 20 minutes. This is great all year round, but particularly in the summer.

📝 Ingredients

  • 300 g baby new potatoes
  • 150 g hot smoked salmon flaked
  • 1/2 small red onion sliced
  • 2 handfuls watercress
  • 150 ml low-fat natural yoghurt
  • 1/2 lemon juiced
  • a small bunch mint chopped

👨‍🍳 Instructions

  1. 1Steam or boil the new potatoes until just tender, about 15 minutes.
  2. 2Toss with the salmon and onion while still hot.
  3. 3Divide the watercress between 2 plates and pile the salmon and potato on top.
  4. 4Mix together the yoghurt, lemon juice and mint and season.
  5. 5Drizzle over the salad to serve.
