This mango coconut latte is creamy, vegan, and made without ice. A refreshing dairy-free mango drink with rich tropical flavor.

- 1 1/2 large ripe mangoes, chilled
- 1 1/4 cups coconut milk (chilled)
- 1/2 cup thick coconut cream (chilled)
- 2–3 tablespoons mango chunks

- 2Slice the mango cheeks and score them in a criss-cross pattern.
- 3Scoop out the cubes and transfer them to a blender.
- 4Also add maple syrup to the blender and blend until smooth. Keep the puree slightly thick so it holds the layers well.
- 5Lightly froth the chilled coconut milk using a frother or whisk. You don’t need too much foam, just a slightly airy texture.
- 6In a bowl, whisk the chilled coconut cream using a hand whisk until it turns light and fluffy. This will be your cloud topping.
- 7Take a tall glass and add mango chunks at the bottom.
- 8Then pour the mango puree over the chunks and let it settle naturally. Don’t mix it.
- 9Slowly pour the coconut milk over the back of a spoon so it forms a separate layer on top.
