Does Nigerian coconut Pasta really exist? Or did I make it up? ? Well this is an amazing pasta variation of our good old Nigerian coconut fried rice with tomatoes. It's delicious and the perfect weeknight dinner.
📝 Ingredients
- 1/4 cup coconut oil
- 1 medium onion ((chopped))
- 1 habanero pepper (chopped) (substitute with ground cayenne pepper or dry pepper flakes)
- 3 oz tomato paste
- 2 tsp bouillion powder
- 1/2 tsp garlic powder
- 1 tsp dry oregano ((substitute with italian seasoning))
- 1 can coconut milk ((400ml))
- 1/2 small green bell pepper (chopped) (optional)
- 3 stalks of spring onions (chopped)
- 6 qt water
- 1 lb rotini pasta
- 1 Tbsp salt
👨🍳 Instructions
- 1--- Make the Coconut milk Pasta Sauce ---
- 2Saute onions in coconut oil till translucent
- 3Cook: Stir in the tomato paste and pepper, allow to cook for about 2 mins then add the coconut milk, spice blend (Bouillion powder, oregano and garlic powder)
- 4Simmer: Allow sauce to simmer till it reduces to a semi thick sauce. Taste for seasoning and adjust accordingly.
- 5Turn off heat and stir in chopped green bell pepper and/or spring onion. they will soften in the residual heat.
- 6--- The Pasta ---
- 7Hot Water: Add salt to 6 quarts of water and bring to a boil
- 8Cook: Pour uncooked Rotini pasta into boiling water.
- 9Drain: Allow pasta cook for 8 minutes, then drain with a colander
- 10Mix: Transfer pasta back to pot. Mix in the coconut pasta sauce until well combined.
- 11Serve warm
