This beef enchilada soup is loaded with hearty flavors from the enchilada sauce, beef, and spices. Enjoy it with crispy tortilla chips, cream, and your favorite hot Mexican salsa.
📝 Ingredients
- 1 lb lean ground beef
- 1 1/2 cups enchilada sauce
- 1 -8 oz can sweet corn (drained)
- 1 - 14 oz can beans (drained)
- 1 medium onion (chopped)
- 1/2 tsp garlic powder
- 1/2 tsp cumin powder
- 1 tsp oregano
- 4 cups beef stock (low sodium)
- 2 Tbsp vegetable oil
- pepper and salt (to taste)
- tortilla chips
- sour cream
- salsa
👨🍳 Instructions
- 1Heat the oil in a stock pot over medium-low heat. Add onions and sauté until translucent (about 4 minutes).
- 2Add the meat, then mix well and cook, while stirring from time to time, until meat is browned (about 10 minutes).
- 3Add the enchilada sauce, corn, beans, and all the spices (garlic powder, cumin powder, pepper, salt, and oregano).
- 4Pour in the beef stock, mix, and bring to a boil. Cook for about 10 minutes or until the soup has the desired consistency.
- 5Adjust with salt and serve topped with tortilla chips, cream, and salsa.
