Hearty vegetables inspired by traditional ratatouille and Italian sausages are roasted together on a sheet pan. Serve with pasta, cheesy polenta or crusty bread for an easy weeknight dinner!

📝 Ingredients

  • 2 cups broccoli florets
  • 1 medium (1 cup) red, yellow or orange bell pepper, sliced
  • 1 medium (1 cup) zucchini, sliced
  • 1 small (about 2 cups) eggplant, sliced
  • 1 Half Stick (1/4 cup) Land O Lakes® Butter melted
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 pound Italian sausage, sliced on bias 1/2 inch thick
  • 1 cup cherry tomatoes, halved
  • 1/3 cup shredded Parmesan cheese
  • 2 tablespoons chopped fresh basil

👨‍🍳 Instructions

  1. 1Heat oven to 400°F. Line 15x10x1-inch sheet pan with parchment paper.
  2. 2Toss all vegetables, except cherry tomatoes, in melted butter, salt and pepper. Spread onto prepared sheet pan. Add Italian sausage.
  3. 3Roast, stirring occasionally, 25-30 minutes or until vegetables are tender and sausage is cooked through.
  4. 4Sprinkle tomatoes onto sheet pan. Roast 10 additional minutes. Remove from oven; sprinkle with Parmesan cheese and basil.
  5. 5Serve with cooked pasta, crusty bread or cheesy polenta.
