Ultra fluffy eggs on top of silky smooth avocado and crispy sourdough bread, this toast is a new level of deliciousness.

📝 Ingredients

  • 2 large eggs
  • water (for boiling eggs)
  • 2 slices sourdough bread (or your preference)
  • 1 tbsp butter (unsalted)
  • 1 avocado (sliced or mashed)
  • kosher salt
  • black pepper
  • red pepper flakes (optional topping)
  • everything but the bagel (optional topping)
  • furikake (optional topping)

👨‍🍳 Instructions

  1. 1In a pot of boiling water, carefully place the eggs and cook for 10 minutes. Transfer the eggs to an iced bath until they’re chilled (about two minutes). Note: You can also boil the eggs the day before and fridge them until you want to eat them.
  2. 2Peel the eggs and set them aside.
  3. 3Optional to toast your bread slices. Spread butter on both bread.
  4. 4Slice the avocado and place it on top of the bread. Sprinkle with salt to season.
  5. 5Use the Microplane / grater and cut-resistant glove to grate the egg over each piece of toast.
  6. 6Sprinkle with any of your preferred seasonings and serve immediately.
