Easy and Healthy Beef Stew

📝 Ingredients
- 400 grams lean stewing steak (e.g. chuck)
- 1 Tbsp extra virgin olive oil
- 1 clove garlic
- 1 brown onion diced
- 4 medium potatos chopped
- 4 medium carrot
- 800 grams tinned tomatos (2 tins)
- 8 cups liquid beef stock (salt reduced)
- 1 Tsp ground cumin
- Pepper
👨🍳 Instructions
- 1Preheat oven to 150 C
- 2Chop meat into cubes, trimming it of any excess fat.
- 3Heat oil in a large ovenproof casserole dish over medium-high heat.
- 4Add garlic and onion and saute for 1-2 minutes or until onion is translucent.
- 5Add beef and cook for 3-4 minutes or until brown all over.
- 6Add potatoes and carrots and stir to combine, cooking for another couple of minutes.
- 7Add tinned tomatoes, beef stock, cumin and season with pepper.
- 8Stir to combine all ingredients and bring to a boil. Reduce to a simmer and cover dish with a lid.
- 9Place in the oven to bake for 1 and 1/2 - 2 hours or until beef is really tender.
- 10Divide between four bowls to serve.
