📝 Ingredients
- 1 1/2 tbsp. water
- 2 tbsp. sugar
- 1/2 cup Cafe GOYA®, prepared strong
- 1 tbsp. Kahlua
- 1 tbsp. rum
- 1 egg yolk
- 1/4 cup sugar
- 1 tbsp. rum
- 1 cup heavy cream
- 1/4 lb. mascarpone cheese, softened
- 12 GOYA® Maria Cookies (1/2 of 7 oz. package)
- 1/2 cup chocolate, grated, or as needed
- 2 tbsp. cocoa powder, or as needed
👨🍳 Instructions
- 1Bring water and sugar to boil in small saucepan. Add coffee, Kahlua and rum. Set aside and allow to cool.
- 2In large mixing bowl, whip egg yolk and sugar together until light in color. Add rum, and place bowl over pot of simmering water. Whip until mixture is light and fluffy, about 3–5 minutes. Transfer to stand mixer and whip until cool. (Alternatively, beat by hand with whisk until cool.)
- 3Whip cream and mascarpone together in medium mixing bowl until mixture makes medium peaks.
- 4Fold egg mixture into mascarpone and cream mixture.
- 5Dip cookies in espresso syrup, and layer alternately with filling and grated chocolate in glass bowl. Chill in refrigerator 6-12 hours.
- 6To serve, dust with cocoa powder.
