Blue cheese filo bites with pears and pecan

These quick and easy blue cheese canapés are the ideal last-minute festive snack recipe, with crispy filo encasing pecans, pear and Stilton.
📝 Ingredients
- 225 g of pears, tinned, drained weight
- 5 filo pastry sheets
- 50 g of butter
- 100 g of Stilton
- 20 pecan nuts
👨🍳 Instructions
- 1Preheat the oven to 180°C/gas mark 4
- 2Drain the pears, cut into small cubes and set aside until needed
- 3Cut the filo pastry sheets into small squares, so that they fit into the holes of a muffin tin
- 4Melt the butter and use a little to grease one muffin hole. Lay a filo square into the hole, brush with more melted butter, then top with another filo square
- 5Repeat the process one more time, so that you end up with three buttered filo layers
- 6Lay a few pear cubes onto the filo pastry, so that the bottom is covered. Fill the remaining muffin holes with buttered filo pastry and pears
- 7Once all of the muffin holes are filled, crumble some Stilton over the pears and decorate each filo basket with a whole pecan nut. Bake in the preheated oven for 15 minutes
- 8Remove from the oven and allow to cool for 5 minutes before serving
