Blackened pork chops brined overnight and broiled to perfection for juicy chops with big bold flavor.
📝 Ingredients
- 2 Pork Chops (thick cut bone-in)
- 4 cups water
- 1/4 cup cider vinegar
- 1/4 cup kosher salt
- 1/4 cup brown sugar
- 1 tbsp black pepper
- Fresh thyme sprigs
- 1 1/2 tbsp smoked sweet Paprika
- 1 tsp Cayenne
- 1 tsp Black Pepper
- 1 tsp Kosher Salt
- 1/2 tsp Dried Oregano
- 1/2 tsp Dried Thyme
- 1 tsp Ground Sage
- 1 tsp Garlic Powder
- 1 tsp onion powder
👨🍳 Instructions
- 1--- Make the brine ---
- 2Mix brine ingredients (water, vinegar, sugar, salt, herbs) together in a large boil. Place pork chops in a large ziplock bag or glass container and add brine. Brine at least 4 hours, but overnight preferred.
- 3--- Make the pork chops ---
- 4Remove chops from the refrigerator. Pat dry with paper towels and let reach room temp.
- 5Season chops generously with blackening spice rub
- 6Place cast iron skillet or grill pan on upper rack in the oven and pre-heat to 500 degrees F. Allow pan to heat for 10 minutes.
- 7Remove pan and add chops then place pan back into the over. Broil 4 minutes per side then remove. Let chops rest 5 minutes.
