For us Dominicans, there is no need to dress up an avocado, but you can fancify it a bit in this simple Ensalada de aguacate (Dominican avocado salad).
📝 Ingredients
- 2 avocado ((or 3 small ones))
- 1/2 small red onion (minced)
- 1/2 red bell pepper (minced)
- 1/2 yellow bell pepper (minced)
- Juice of 1 lime
- 1 tablespoon apple cider vinegar
- 2 tablespoons olive oil
- 3/4 teaspoon salt ((or more, to taste))
- pepper (freshly-cracked, or ground) (to taste (optional))
- A handful of cilantro leaves ((optional) and extra for garnish)
👨🍳 Instructions
- 1--- 1. Cutting avocado ---
- 2Making salad: Peel and dice the avocados and scoop into a bowl.
- 3--- 2. Mixing ingredients ---
- 4Mix the avocado with the lime juice. Combine and red and yellow bell peppers with onions. Mix well.
- 5--- 3. Mix dressing ---
- 6Making dressing: Combine the vinegar, oil and salt. Whisk to combine
- 7--- 4. Dressing salad ---
- 8Mix in the vinaigrette, and add black pepper to taste (and more salt if you find it necessary).Mix in the cilantro.
- 9--- 4. Serving ---
- 10Serving: Decorate with cilantro leaves.Serve inmediately (see notes).
