- 1 pound (454g) bucatini pasta or penne
- 18 ounces (500g) cheese, crumbled or grated: feta, gouda, and parmesan
- 10.5 ounces (300g) unsalted butter
- 1/2 cup (60g) all-purpose flour
- 8 1/2 cups (2 liters) whole milk
- 2/3 cup (150g) heavy cream
- 2 egg yolks
- 1 small onion, finely chopped
- 2 garlic cloves, grated
- Salt and freshly ground black pepper, to taste
- Freshly grated nutmeg, to taste
- 1/2–3/4 cup (30–45g) breadcrumbs
- 2 tablespoons olive oil or melted butter
👨🍳 Instructions
- 1Cook the pasta in salted water until al dente. Drain well and set aside.
- 2Melt the butter in a large pot over medium heat. Add the chopped onion and cook until soft and translucent. Stir in the grated garlic and cook briefly until fragrant.
- 3Sprinkle in the flour while whisking continuously to form a smooth roux. Cook for about a minute without allowing the mixture to brown.
- 4Gradually pour in the milk, whisking constantly until the sauce becomes smooth and begins to thicken. Season with salt, black pepper, and freshly grated nutmeg.
- 5Reduce the heat to low and stir in the heavy cream. In a small bowl, whisk the egg yolks and temper them by slowly adding a few spoonfuls of the hot sauce while whisking. Pour the tempered yolks back into the pot and stir gently.
- 6Add the cooked pasta and cheese mixture, stirring until the cheeses melt and the pasta is evenly coated in the creamy béchamel.
