  • 4 oz (113g) unsalted butter, cubed

Place over medium heat and cook, stirring constantly, until the mixture begins to thicken.In a separate bowl, whisk the egg yolks. Slowly add a ladle of the hot milk mixture to temper the yolks, whisking constantly.Gradually pour the yolks into the saucepan, stirring continuously. Cook for another 2–3 minutes until thickened.Remove from heat and stir in the heavy cream, vanilla, and cubed butter until smooth.Transfer to a bowl, cover with plastic wrap touching the surface, and chill completely.
