📝 Ingredients

  • 1 1/2 cups Oregon Chai Tea Latte Concentrate
  • 2 cups gluten-free or all-purpose baking flour
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 cup mascarpone cheese
  • 1 tbsp brown sugar
  • 1 tsp vanilla extract
  • 2 cups strawberries
  • 1 cup blackberries

👨‍🍳 Instructions

  1. 1Combine all of the dry pancake ingredients in a large mixing bowl – flour, baking powder baking soda, salt, and white sugar.
  2. 2Slowly pour in the Oregon Chai Tea Latte Concentrate, stirring to combine. Mix until well combined into a loose batter.
  3. 3Heat a pancake griddle or large non-stick pan over high heat. Spray with cooking spray.
  4. 4Spoon pancake batter onto griddle in ¼ cup scoops.
  5. 5Cook each pancake for 2-3 minutes, then flip and cook for an additional 1-2 minutes. Pancakes should be a light, golden brown when they’re done.
  6. 6Remove pancakes from heat and set aside.
  7. 7In a small bowl, combine the mascarpone cheese, brown sugar, and vanilla extract. Whip with a fork until well combined and slightly fluffy.
  8. 8Stack pancakes on serving dishes. Drizzle with maple syrup, then top with a dollop of whipped vanilla mascarpone and fresh berries.
