📝 Ingredients

  • 1.5 pounds chicken breasts (boneless, skinless, cut into bite sized)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 cup (5.64 oz | 160 g) cornstarch
  • 3 tablespoons vegetable oil
  • 1 teaspoon cornstarch
  • 1/3 cup white vinegar (2.70 fl.oz | 80 ml)
  • 1/2 cup granulated sugar (3.52 oz | 100 g)
  • 1/4 cup ketchup (2.04 oz | 58 g)
  • 1 teaspoon garlic clove
  • 1 tablespoon low sodium soy sauce

👨‍🍳 Instructions

  1. 1Preheat the oven to 400 F | 200 C.
  2. 2In a large bowl, combine chicken, salt, pepper and eggs.
  3. 3Add cornstarch to another large bowl. Remove the chicken from the egg mixture and toss in the cornstarch.
  4. 4Heat a large non-stick skillet on medium-high heat with oil. Cook chicken for 2 minutes until a little bit crispy. It does not have to be cooked thoroughly. Transfer to a 9x13 inch baking dish with the grease and bake for 15-20 minutes.
  5. 5While the chicken is baking, make the sweet and sour sauce. Whisk the white vinegar and cornstarch together. Next, add the sugar and whisk until it dissolves. Add the rest of the ingredients and whisk. Heat the sauce in the same skillet until thick.
  6. 6Remove the chicken from the oven, pour the sauce, and toss gently.
  7. 7Garnish and serve.
