Avocado Strawberry Salad with a creamy poppyseed dressing looks so pretty, but trust me, it tastes even better. With crunchy almonds and the saltiness from the feta makes this salad a perfect light meal. Change the cheese, add different kind of nuts, choose your favourite dressing - that is how versatile this salad is.

📝 Ingredients

  • 2 cups baby spinach (approximately 35g)
  • 250 g strawberries
  • 1 medium ripe avocado
  • 1 small onion, approximately 30g (sliced thinly )
  • 1/4 cup almond slices
  • 50 g feta
  • 1/4 cup olive oil
  • 1 tbsp mayonnaise
  • 2 tbsp vinegar
  • 2 tbsp honey or maple syrup
  • 1 tbsp black poppy seeds
  • 1/4 tsp salt
  • 1/2 tsp pepper coarsely ground
  • 1 tsp Dijon Mustard

👨‍🍳 Instructions

  1. 1--- PREPARE THE SALAD ---
  2. 2Wash and dry the spinach leaves with a kitchen towel.
  3. 3Hull and cut the strawberries into halves or quarters.
  4. 4Peel the avocado and cut it into thick slices or chunks.
  5. 5Layer the spinach leaves on a serving dish.
  6. 6Toss avocado, strawberries, onion, feta cheese and almond slices in a mixing bowl.
  7. 7To prepare the dressing, mix all the ingredients and pour it over the salad.
  8. 8--- PREPARE THE POPPY SEED SALAD DRESSING ---
  9. 9Add all the salad dressing ingredients in a cup or a jar.
  10. 10Whisk it well if you are using a cup.
  11. 11If you are using a jar, close the lid tightly and give the jar a good shake.
  12. 12--- TO SERVE ---
  13. 13Either drizzle the dressing over the salad and mix gently or serve it on the side.
