These Apple Cinnamon Muffins are egg free, easy to bake, super delicious, aromatic and loaded with apple chunks. Though you can omit the topping of melted butter, sugar and cinnamon, I highly recommend that you use them. Makes these rustic muffins perfectly buttery and flavourful.

📝 Ingredients

  • 2 cups plain flour (all purpose flour)
  • 2 cups diced apple (approx 190g)
  • 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg powder (optional)
  • 1/2 cup plain yogurt (thick)
  • 1/2 cup milk
  • 1/2 cup butter (melted)
  • 1 tsp vanilla extract
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp butter (melted)
  • 2 tbsp white sugar
  • 1 1/2 tsp cinnamon powder

👨‍🍳 Instructions

  1. 1Preheat the oven to 200°C.
  2. 2Apply and smear muffin tray with some butter.
  3. 3Add 2 tbsp of the measured flour to the diced apples. Toss to mix. This will coat the apples with the flour.
  4. 4Sift flour, baking powder, baking soda and cinnamon powder together in a mixing bowl.
  5. 5In another bowl whisk yogurt, vanilla extract, sugar, salt, melted butter and milk together.
  6. 6Add the dry ingredients to the wet ingredients and mix just enough to wet the dry ingredients.
  7. 7Add the diced apples. Mix gently.
  8. 8Spoon the batter ¾ of the way into the prepared muffin tray.
  9. 9Bake for 5 minutes at 200℃.
  10. 10Then lower the temperature to 180℃ and bake further for 20-25 minutes or till the top of the muffins appears light golden brown.
  11. 11Insert a tooth pick into the muffin. If it comes out clean then the muffins are done.
  12. 12Cool the muffins in the tray for 5 minutes.
  13. 13Then transfer them to a wire rack.
  14. 14Let them cool on a wire rack completely.
  15. 15--- ADD THE TOPPING ---
  16. 16Melt 2 tbsp butter. I melt it in the microwave oven for 15-20 seconds. Keep an eye as you want the butter to just melt and not simmer.
  17. 17Mix the 2 tbsp white sugar and 1½ tsp cinnamon powder.
  18. 18Apply melted butter over a muffin.
  19. 19Dip the top in the cinnamon sugar mixture.
  20. 20Repeat the same with the remaining muffins.
  21. 21Enjoy apple cinnamon muffins for breakfast, as a snack or dessert.
  22. 22It tastes good served with a dollop of vanilla ice cream.
