📝 Ingredients
- 1 block feta cheese (about 200g (full-fat, not crumbled))
- 400 g Roma tomatoes (about 2 cups)
- 1 boneless skinless chicken breast ( cut into bite sized cubes)
- 1 to 2 tablespoons olive oil (plus more for drizzling)
- 1/2 teaspoon Salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon chicken seasoning
- 1 teaspoon dried chili flakes (optional)
- 1/2 teaspoon cayenne pepper (optional)
- 250 g pasta (your favorite)
👨🍳 Instructions
- 1Preheat your oven to 400°F (200°C). Grab a medium baking dish no need to line it.
- 2Add the Roma tomatoes and cubed chicken breast to the baking dish.
- 3Season the chicken with salt, thyme, garlic and onion powder, chicken seasoning, chili flakes, and cayenne (if using). Add 1–2 tablespoons of olive oil and mix to coat everything evenly.
- 4Make a space in the center of the dish and place the block of feta cheese.
- 5Drizzle olive oil generously over the entire dish.
- 6Bake uncovered for 30 to 40 minutes, until the chicken is cooked through, the tomatoes have softened.
- 7While it bakes, cook the pasta in salted boiling water until cooked(10-12 minutes).
- 8Drain and set aside, reserve a splash of the pasta water.
- 9Once baked, mash the feta and tomatoes, with a fork or spoon to form a creamy, saucy base.
- 10Add the cooked pasta and stir until well coated. Use reserved pasta water as needed to loosen the sauce.
- 11Stir in spinach or basil if using.
- 12Serve warm
