All you need is 15 minutes and a few simple ingredients to make this easy Chinese Chicken Fried Rice
📝 Ingredients
- 4 cups cooked day-old rice (about 550g (see note 1 on how to cook the rice))
- 3 eggs (beaten)
- 1/2 cup carrots (diced (about 75g))
- 1/2 cup peas (about 70g)
- 3 scallions (green parts only, sliced)
- 1/2 medium onion (diced)
- 4 cloves garlic (minced)
- 2 1/2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 tablespoons Chinese cooking wine
- Chicken
- 350 g boneless (skinless chicken thighs, diced)
- 1/4 teaspoon salt
- 1/2 teaspoon chicken bouillon
- 1 to 2 teaspoons red chili flakes
- Oil for cooking
👨🍳 Instructions
- 1Before you start cooking, make sure all your ingredients are prepped and ready to go. Fried rice cooks very quickly.
- 2Beat the eggs and set aside.
- 3If you’re using fresh vegetables, dice the carrots and slice the scallions. Dice the onion and mince the garlic.
- 4Cut the chicken into bite-sized pieces and season with the salt and chicken bouillon.
- 5Mix the soy sauce, oyster sauce, and cooking wine in a small bowl and set aside.
- 6Heat a wok or large skillet over high heat. Add a little oil, then add the chicken. Cook until browned and fully cooked through.
- 7Transfer the chicken to a plate.
- 8Add the eggs to the pan and scramble until just set. Remove and set aside with the chicken.
- 9Add a little more oil if needed, then add the onions and garlic. Stir fry for about 1 minute.
- 10Add the carrots and peas and stir-fry for 2 to 3 minutes. Season with a little chicken bouillon and the chili flakes, then stir well.
- 11Add the rice, the chicken and eggs to the pan. Pour in the sauce and toss everything together, break up any clumps. Stir-fry for 1 to 2 minutes.
- 12If you’re using a wok, spread the rice out across the surface and leave it undisturbed for 1 to 2 minutes. This helps the rice toast slightly and develop even more flavor.
- 13Stir everything together, then add the scallions.
- 14Taste and adjust as needed. If you’d like it spicier, add more chili flakes while stir frying.
- 15Serve hot and enjoy.
