Eggless Thandai cake Recipe is a fusion teacake flavoured with the Holi special thandai mix and makes a perfect treat to celebrate Holi.

📝 Ingredients

  • 150 g Sugar
  • 10 g Almonds
  • 10 g Cashewnuts
  • 10 g Pistachios
  • 1.5 tbs Melon Seeds
  • 1/2 tsp Pepper
  • 1/2 tsp Fennel Seeds
  • 1 tbs Dried Rose Petals
  • Saffron (a few strands)
  • 2-3 Cardamom Pods
  • 200 g Maida/ All Purpose Flour
  • 50 g Dairy whitener/ Milk Powder
  • 1 tsp Baking Powder
  • 1/2 tsp Baking soda
  • 300 ml Milk
  • 100 ml Ghee
  • Pistachios and Almonds and Rose petals (for Garnish)

👨‍🍳 Instructions

  1. 1Preheat oven to 160C.
  2. 2Grease and line 7” square pan and keep it ready.
  3. 3In a bowl, combine maida, milk powder, baking powder and baking soda.
  4. 4In a mixer jar take all the ingredients given under to grind, grind to make a smooth mix.
  5. 5Add it to the dry ingredients and mix well.
  6. 6Add milk and ghee to the dry mix and whisk to form smooth batter.
  7. 7Pour the batter into the prepared cake tin and garnish the top with pistachios, almonds and rose petals.
  8. 8Bake in the preheated oven for 35 minutes or until a toothpick inserted comes out clean.
  9. 9Allow it to cool for a while.
  10. 10Flip it on to wire rack and re flip it to another rack.
  11. 11Allow the cake to cool completely before slicing.
  12. 12Store the leftover pieces in an airtight box in fridge.
