- 2 pounds boneless, skinless chicken thighs
- 2 pounds baby potatoes, halved
- 1 large onion, diced
- 3 carrots
- 1 cup gluten-free low-sodium chicken broth
- 1/3 cup dairy-free heavy cream
- 1 teaspoon ground paprika
- 1 teaspoon dried thyme
- 1 1/2 teaspoons salt
- 1/2 teaspoon ground black pepper
- 2 garlic cloves, minced
- 1 1/2 tablespoons cornstarch
- Fresh parsley, chopped for garnish
👨🍳 Instructions
- 1Combine Ingredients in Slow Cooker: Add the chicken, diced onions, roughly chopped carrots, halved baby potatoes, thyme, paprika, salt, black pepper, minced garlic and chicken broth to the slow cooker. Stir everything together until well combined.
- 2Cook Partially: Cover and cook on “Low” setting for 6 hours or the “High” setting for 3 hours. About 1 hour before the cooking time is complete, give everything a gentle stir.
- 3Add Cornstarch & Heavy Cream: In a small bowl whisk together the cornstarch and heavy cream to dissolve the corn starch. Pour the cream-cornstarch mixture into the slow cooker and stir well to combine.
- 4Continue Cooking Until Tender: Cover and continue cooking for the remaining hour, until the sauce has thickened and the chicken is tender.
- 5Garnish & Serve: Garnish with freshly chopped parsley before serving.
