Each stuffed pepper contains less than 250 calories and is low in sugar, salt and saturated fat. The peppers are stuffed with a gorgeous, vegetable-rich sauce made from onions, garlic, courgette, spinach, turkey mince, and baked beans.
📝 Ingredients
- 2 tsp vegetable oil (canola oil)
- 1 onion (diced)
- 2 cloves garlic (minced)
- pinch freshly ground black pepper
- 500 g lean turkey mince (ground turkey) (or veggie mince)
- 1 courgette (zucchini) (diced)
- 415 g canned no added sugar baked beans
- 1 tsp tomato puree
- 2 tsp smoked paprika
- 1 tbsp cumin
- 75 g spinach (roughly chopped)
- 6 peppers
- 50 g reduced-fat cheese (grated)
- 5 g parsley (finely chopped)
👨🍳 Instructions
- 1Warm the oil in a large pan over a medium heat.
- 2Add the onion and garlic and a pinch of salt and pepper. Fry for 3-5 minutes until just softening.
- 3Add the turkey mince and fry until all the pink has gone – use your spatula to break up any lumps as it fries.
- 4Add the courgette and stir through.
- 5Add the beans and stir through.
- 6Add the tomato puree, cumin and smoked paprika.
- 7Stir, then simmer for 10 minutes until slightly thickened.
- 8Meanwhile, preheat the oven to 200C (180C fan).
- 9Add the spinach and stir through. Season to taste.
- 10Pick six peppers that are able to stand up upright. Cut the tops off the peppers and arrange on a large, lightly greased tray.
- 11Spoon the filling into them.
- 12Put a pinch of cheese on top of each one.
- 13Sprinkle with the parsley.
- 14Bake for 10 minutes until the cheese has melted. Dig in!
