This frozen lemon pie is creamy, tangy, and refreshing! A fresh twist on frozen lemonade pie, a simple no-bake dessert perfect for summer.
📝 Ingredients
- 1 3/4 cups graham cracker crumbs
- 1/3 cup butter melted
- 2 1/2 cups full fat yogurt (plain (vanilla) or lemon flavoured)
- 1 1/4 cups cream (whole/heavy or whipping cream at least 30% fat content)
- 1/4 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 tablespoon gelatine
- 2 tablespoons milk (2% or whole milk)
- 2-3 ounces white chocolate grated
- 1 cup cream (heavy, whole or whipping cream) whipped until thick
👨🍳 Instructions
- 1Mix the cookie crumbs and melted butter until combined, then press down on the bottom of an 8 inch (20 cm) springform cake pan (or line a regular cake pan with plastic wrap). Place in the refrigerator while you make the filling.
- 2In a medium bowl beat together the yogurt, cream, sugar, zest, juice and cream until creamy and thickened. Set aside.
- 3In a small pot add the milk and sprinkle the gelatine on top, let stand one minute, then place the pot on low heat and heat just until the gelatine has dissolved, stirring often (1-2 minutes), do not boil, then immediately remove from heat. Add a heaping tablespoon of the yogurt mixture to the gelatine mixture and stir gently to combine, then fold into the remaining yogurt mixture until combined.
- 4Remove the cookie base from the fridge, spoon the filling evenly on top, cover with plastic wrap and freeze for 3-5 hours or even better overnight until firm. Let sit for 10-15 minutes before serving then top with a dollop of whipped cream and grated white chocolate and or more lemon zest or lemon slices. Enjoy!
