These braised boneless short ribs slow cooker are so tender and delicious with a savory spicy rub. They are perfect for feeding a large family on a budget, easy to make with only 15 minutes prep-time, and finger-licking good!

📝 Ingredients

  • 2-3 lbs Short ribs (boneless)
  • 1 tbsp Olive oil
  • 1 Large onion (chopped)
  • 2 Bay leaves (whole)
  • 1 tbsp Tomato paste
  • 2 tbsp Dijon mustard
  • 3 tsp Beef bouillon powder
  • 2 tsp Fresh thyme (chopped)
  • 1 cup Red cooking wine
  • Salt and pepper to taste
  • 1/2 cup Heavy whipping cream
  • Fresh parsley (optional)

👨‍🍳 Instructions

  1. 1Heat olive oil in a large skillet over medium-high heat.
  2. 2Add salt and pepper to taste to the meat, and sear the boneless short ribs on all sides and then place them into the bottom of a slow cooker.
  3. 3In a mixing bowl, add dijon mustard.
  4. 4Add tomato paste.
  5. 5Add thyme.
  6. 6Add beef bouillon.
  7. 7Pour in red wine.
  8. 8Whisk sauce ingredients together until smooth and combined.
  9. 9Place bay leaves and onions over the ribs in the slow cooker.
  10. 10Pour the red wine mixture over the top of the meat, place the lid on the slow cooker. Cook on low heat for 8 hours. You will want to use low heat if possible in order to ensure the most tender ribs possible.
  11. 11Once finished, remove the meat from the slow cooker. Place on a serving platter.
  12. 12Pour the sauce from the slow cooker into a skillet over medium heat.
  13. 13Pour in heavy whipping cream, and whisk the sauce well until combined.
  14. 14Bring the sauce to a boil, and then reduce the heat to medium again. Cook down until the gravy reaches the desired consistency stirring frequently.
  15. 15Serve over mashed or riced cauliflower with gravy and fresh parsley (optional).
