Tender pork scotch marinated in 7-Up, soy sauce, ginger, and oyster sauce, pan fried until caramelised and juicy.

📝 Ingredients

  • 1 kg pork scotch, sliced into thick pieces
  • 1 cup 7-Up or any clear lemon-lime soda
  • 2 stalks scallions, chopped
  • 1 thumb ginger, grated
  • 1 tbsp cooking wine
  • 2 tbsp light soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp garlic & spiced salt powder
  • 2 tsp cornstarch or potato starch
  • oil for frying

👨‍🍳 Instructions

  1. 1In a bowl, combine 7-Up, scallions, ginger, cooking wine, soy sauce, oyster sauce, and garlic & spiced salt powder.
  2. 2Add pork slices and mix thoroughly. Cover and marinate for at least 2 hours or overnight for best results.
  3. 3Sprinkle starch over the marinated pork and toss lightly until coated.
  4. 4Heat a pan over medium-high heat with a thin layer of oil.
  5. 5Fry pork pieces without overcrowding the pan. Cook until deeply caramelised and crisp around the edges.
  6. 6If desired, pour leftover marinade into the pan and simmer until reduced into a sticky glaze.
  7. 7Rest briefly before serving with steamed rice or noodles.
