A very nutrient-dense and healthy bowl of quinoa and black beans. Great by itself or as a base for adding other protein on top!

📝 Ingredients

  • 1 teaspoon olive oil
  • 1 large onion (chopped)
  • 5 cloves garlic (peeled and chopped)
  • 3/4 cup uncooked quinoa
  • 1 1/2 cups low sodium vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste
  • 1/2 can corn kernels
  • 1 15 ounce can black beans, drained
  • 1/2 cup chopped fresh cilantro

👨‍🍳 Instructions

  1. 1Heat the oil in a pan over medium heat. Add onions until lightly browned, then add the garlic until lightly browned.
  2. 2Add quinoa, broth, spices, salt and pepper into the pan.
  3. 3Bring to a boil on high, then simmer on low for 20 minutes.
  4. 4Add beans and corn to the pan over low heat (if necessary) until heated through. Add cilantro and serve.
