  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1/2 medium onion (chopped)
  • 8 ounces cremini mushrooms (sliced)
  • 2-3 cloves garlic (minced)
  • 3/4 cup chicken broth or vegetable broth
  • 1/2 cup heavy/whipping cream
  • 1 pound uncooked potato gnocchi
  • 5.2 oz/150g Boursin cheese (softened)
  • Salt & pepper (to taste)
  • For serving: fresh chopped parsley (optional, to taste)
