Questions about Black cherry
Can you eat black cherries raw?
Yes. Wash ripe black cherries and eat the flesh fresh; spit out the stones rather than biting into them.
Are black cherries the same as sour cherries?
No. “Black cherry” usually describes a dark, sweet cherry, while sour cherries are tarter and are often cooked in pies, crumbles and sauces. The name can also refer to a particular tree, so check what fruit you have.
How do you make black cherry jam?
Remove the stones, then simmer the fruit with jam sugar and a squeeze of lemon. Bring it to 105 °C, stirring, and test for a set on a chilled plate; pour into clean, hot jars.
What goes well with black cherries?
Their sweetness works well with dark chocolate, almonds, thick yoghurt and soft cheeses. For a savoury dish, try them in a sauce with duck or pork.
How do you make black cherry and tarragon soda?
Simmer stoned cherries with a little sugar and water for about 10 minutes, then add a sprig of tarragon and leave it to infuse for a few minutes. Strain, chill and top a splash of the syrup with sparkling water.
How should you store fresh black cherries?
Keep them unwashed, with their stalks on, in a container in the fridge and wash them just before eating. Remove any split or mouldy fruit so it does not spoil the rest.
Can you eat black cherry stones?
No. Don’t chew or crush the stones: cherry stones contain compounds that can release cyanide when damaged. Eat the flesh and discard the stones.
How much black cherry counts as a portion of fruit?
A portion is about 80 g, roughly a small handful of cherries. Remove the stones before weighing or serving them to a young child.
