Hähnchenspieße mit Nudeln und süß-sauren Zuckerschoten

Diese bunten Hähnchenspieße mit Soba-Nudeln und süß-sauren Zuckerschoten sind schnell zubereitet und stecken voller asiatischer Aromen. Ein wunderbar ausgewogenes Gericht mit einer leckeren Marinade und frischem Gemüse.
Zutaten
- 300 g sugar snap peas
- 2 green bell peppers
- 2 red onions
- 180 g (soba) noodles
- 300 g chicken thigh fillet
- 2 cloves garlic
- 1 1/2 cm piece of ginger
- 1/2 red chili
- 4 tbsp olive oil
- 3 tbsp Japanese soy sauce
- 2 tbsp white wine vinegar
- 1 tbsp + 1 tsp honey
- 2 tbsp sesame seeds
- coconut oil
- 1 L water
Zubereitung

1. Start by making the marinade for the chicken: mix the olive oil, soy sauce, crushed garlic and 1 tsp honey. Cut the chicken thigh fillet into small cubes and place them in the marinade. Toss everything well and let it sit in the fridge for at least 30 minutes. I usually give it a few stirs while it marinates.2. Clean the chilli, garlic, onion and ginger and chop everything finely. Slice the bell pepper into long strips. Once the chicken has marinated long enough, thread the pieces onto the skewers. Heat a little coconut oil in a grill pan and fry the skewers on all sides. This takes about 8 minutes.3. Bring 1 liter of water to a boil in the kettle (that’s quick). Put the noodles in a large bowl and pour the boiling water over them. Make sure all the noodles are submerged. Leave them for about 5 minutes (check the package for exact times, this can vary by type) and then drain the noodles.4. Heat some coconut oil in the wok and add the garlic and ginger. Add the onion and sauté everything. Add the bell pepper, toss well and finally add the sugar snap peas. Stir-fry everything for 4 to 6 minutes. Add the vinegar and honey to the vegetables, toss and watch everything take on a beautiful shine.5. Put the noodles in a bowl, top with the vegetables and sprinkle over the sesame seeds. Place the bowl on a small plate and rest the chicken skewers on top. The most fun is of course eating with chopsticks 😉 Enjoy!
